Of the three main types of tea that we drink (green tea, oolong tea, and black tea), all come from the leaves of the camellia sinensis plant. Of those three, only the making green tea does not involve some process of fermentation. While oolong tea is partially fermented and black tea fully fermented, green tea is either steamed, baked, or pan heated to prevent oxidation. This is the reason why green tea retains its green color, as well as much of its antioxidant capacity. There are many varieties of green tea and they differ depending on the region it was grown, the variety of the tea plant, and the way it was dried. Additions to the green tea family can be also made by infusing flower with green tea, it yields many jasmine green tea and others.

You may have come across the name epigalloctechin-3 gallate (EGCG) when scanning the labels of various nutritional supplements that contain green tea, and the preservation of this nutrient, is what has gained green tea much of its recent publicity. What is lost during the fermentation process of the black and oolong teas is this powerful antioxidant which combats free radicals.

So what exactly is a free radical you ask? Well, a free radical is essentially an unpaired electron that has no purpose concerning our body’s growth but rather act on its own often causing damage. Free radicals can cause tissue damage at the cellular level, damage to our DNA, mitochondria, cell membrane, among other parts of the cell, and contribute to aging, heart disease, cancer and other various diseases. Alcohol consumption, smoking, and various chemical exposures also cause an increased amount of free radicals normally present in the body. Our bodies’ natural way of combating these free radicals is through its use of antioxidants.

Green tea contains many nutrients and minerals that provide health benefits such as antioxidants. They are nutrients that can safely terminate free radicals before they damage vital parts of our cellular structure. Some common antioxidants include Vitamin C, and Vitamin E (which actually seeks out to destroy free radicals). However, compared to these highly popular vitamin antioxidants, EGCG, the antioxidant in green tea, is twenty-five times more effective than vitamin E and one hundred times more effective than vitamin C in neutralizing free radicals. Furthermore, as far as servings go, a cup of green tea usually provides more antioxidant capacity than a serving of broccoli, carrots, spinach or strawberries. Additionally, besides the antioxidants in green tea (EGCG, polyphenols, catechins, etc.), green tea also contains flavonoids which protects against infection and bruising, and thiamine which is an amino acid that is good for anti-stress effects and controls cortisol (which controls weight loss!).
